Fossier Biscuits Roses de Reims - French Pink Ladyfingers

Founded in the heart of the French Champagne region in 1845, Fossier has built its reputation on quality.

With Biscuits Roses (pink cookies!), you have a choice: you can dip these sugar-dusted biscuits in a glass of bubbly, as they do in Reims, the capital of French champagne making, or you can use the biscuits as the basis for various cakes such as Tiramisu. They quickly absorb any liquid they come in contact with, delicious with everything from liqueurs, wines and champagne to hot tea.

Originally cooked twice (bis-cuit), these confections date back to the 17th century. In those days, the pink coloring was added to mask the brown flecks of the ground vanilla bean. Fossier has been making these biscuits according the traditional recipe since 1845.
